Mouthwatering Monday...Breakfast Casserole!


INGREDIENTS
* 1 pound sage flavored breakfast sausage
* 3 cups shredded potatoes, drained and pressed
* 1/4 cup butter, melted
* 12 ounces mild Cheddar cheese, shredded
* 1/2 cup onion, shredded
* 1 (16 ounce) container small curd cottage cheese
* 6 jumbo eggs

DIRECTIONS
1. Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 9x13 inch square baking dish.
2. Place sausage in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, crumble, and set aside.
3. In the prepared baking dish, stir together the shredded potatoes and butter. Line the bottom and sides of the baking dish with the mixture. In a bowl, mix the sausage, Cheddar cheese, onion, cottage cheese, and eggs. Pour over the potato mixture.
4. Bake 1 hour in the preheated oven, or until a toothpick inserted into center of the casserole comes out clean. Let cool for 5 minutes before serving.

Spooktacular Card Party & Magic Show at Fremont's Keene Mem. Library. Sign up for a new library card. Magic show starts at 7pm.

6:30-9:30pm
Trail of Terror opening night at Izaak Walton Park. Park your car at Christensen Soccer Field, 1710 W. 16th then board a hayrack to the haunted trail. $8 for ages 13 and up, $5 for ages 6-12, and Free for children under 5. The haunted trail will continue Oct 23-24 and Oct 29-31.

Free Books Every Month for your child!



It sounds almost too simple to be true, but by reading regularly with your children during their preschool years, you are giving them the biggest boost toward a successful education they will ever get. Dolly Parton's Imagination Library will help you read with your child. There are many reasons parents do not read to their child, but we can eliminate one of them.

Every child will have books of their very own, at no cost to you, thanks to Fremont Area United Way & Dolly Parton... Each month a new carefully selected book will be mailed in your child's name directly to your home. He/she can look forward to new and exciting reading adventures until he/she turns five years old as long as you remain a resident of Dodge County. Should the child move outside Dodge County, he/she automatically exits the program.

Who is eligible? Children aged birth to their fifth birthday who reside in Dodge County.

What are your responsibilities? Be a resident of Dodge County, submit a completed registration form or use online registration , Notify the Fremont Area United Way any time your address changes, and READ TO YOUR CHILD.

When will my child start receiving books? Eight to ten weeks after your registration form or online submission has been received, books will begin arriving at your home and will continue until your child turns five or you move out of Dodge County.
NOTE: The on-line website is a little confusing...just ignore any of the "Login/Password" boxes.

How can you help? Do you know a young child in Dodge County who is not receiving Dolly Parton's Imagination Library? Give their parents a brochure (available at MOPS meetings) and encourage them to fill it out and mail it. Telling them about this FREE program can make a huge difference in their future and the future of our community. Thanks to Crystal M. for alerting MOPS about this great program!

Mouthwatering Monday...Zesty Meatball Soup!

Ingredients:
1 beaten egg
10ea saltine crackers, finely crushed
1 Tablespoon grated Parmesan or Romano cheese
1 Tablespoon chopped fresh parsley
1/4 Teaspoon Pepper
1 pound ground beef

2 small zucchini, chopped (2 cups)
1/2 cup chopped onion
2 cans (14 1/2 oz size) stewed tomatoes with Italian seasonings
1 can (15oz size) tomato sauce with Italian seasonings
1 can (14oz size) reduced sodium beef broth
1/2 cup uncooked dry small shell pasta

Directions:
1. In large bowl, combine egg, crackers, cheese, parsley and pepper. Add ground beef. Mix well. Shape into 36 one-inch balls.

2. Spray Dutch oven with nonstick cooking spray. Cook meatballs, half at a time, in pot over medium-high heat for 6-8 minutes or until no longer pink in center, turning occasionally. Remove meatballs from pot.

3. In same Dutch oven cook zucchini and onion until tender. Stir in undrained tomatoes, tomato sauce, beef broth and pasta. Bring to boiling. Reduce heat. Simmer, uncovered, about 8 minutes or until pasta is tender. Stir in meatballs, Heat through.

Mouthwatering Monday...Roasted Pumpkin Seeds!

A Kitchen Simple Recipe!...In a bowl, combine 2 cups fresh, rinsed pumpkins seeds with 1/2 teaspoon fine sea salt and 2 tablespoons Tamari or other Japanese soy sauce.

Spread on a rimmed baking sheet and bake at 425 degrees, shaking occasionally, until seeds turn taoasty brown, about 12 minutes.

Beware of Area "Text Message" Scam

Omaha Police have sent out a crime alert after a so-called 'phishing scam' showed up as text messages on cell phones across the metro Omaha area.
Financial institution customers/members are being contacted via Text message saying that their bank cards have been deactivated and that they need to call a phone number in order to reactivate their card. When they call they are being ask for their banking information, which police warn could be used by identity thieves...
