Camp Rivercrest Upcoming Events

March 27-29, 2009 The Scrapbook, Quilt, and Craft Retreat at Camp Rivercrest is a weekend dedicated to providing women an opportunity to have “quiet space”, deepen relationships and work on their favorite projects. It is a perfect weekend to invite a friend or neighbor and relax together. You can bring your own project, or if you are interested in learning something new, we have a beginning quilt class and a professional consultant to guide you in your first scrapbooking project. There will also be great food as Paula, our wonderful cook, goes all out for this weekend. Ladies consistently rave about her creations!

Things Only a Mom Would Know

One day my mother was out and my daddy was in charge. I was 2 1/2 years old and had just been given a little 'tea set;' it was one of my favorite toys. Daddy was in the living room engrossed in the evening news when I brought Daddy a little cup of 'tea', which was just water.

After several cups of tea and lots of praise for such yummy tea, Mom came home. Dad had her wait in the living room to watch me bring him a cup of tea, because it was 'just the cutest thing!'

Mom waited, and sure enough, I came down the hall with a cup of tea for Daddy. As mom watched him drink it up she said, (as only a mother would know... :) 'Did it ever occur to you that the only place she can reach to get water is the toilet?'

Mexican Egg Casserole

Mexican Egg Casserole

1/2 c. all-purpose flour
1 tsp. baking powder
12 eggs, lightly beaten
4 c. shredded Monterey jack cheese, divided
2 c. small-curd cottage cheese
2 plum tomatoes, seeded and diced
1 can (4 oz) chopped green chilies, drained
4 green onions, sliced
1/2 tsp hot pepper sauce (I typically leave this out)
1 tsp dried oregano
2 TBS minced fresh cilantro or parsley (I typically leave this out)
1/2 tsp salt
1/2 tsp pepper
Salsa, optional



In a large bowl, combine the flour and baking powder. Add the eggs, 3 1/2 cups cheese, cottage cheese, tomatoes, chilies, onions, hot pepper sauce, oregano, cilantro, salt, and pepper. Pour into an greased 13 x 9 x 2 in. baking dish. Sprinkle with the remaining cheese. Bake, uncovered, at 400 for 15 min. Reduce heat to 350 and bake 30 minutes longer or until a knife inserted near the center comes out clean. Let stand for 5 minutes before cutting. Serve with salsa if desired.

*I actually bake it and then add the cheese on top and put back in the oven to melt the cheese. I don't like the cheese on top baking for that long.

Yield: 8 servings

Apricot Delight Juice

22 ounces apricot nectar
22 ounces pineapple joice
22 ounces lemonade
2 limes, juiced

Combine all ingredients, stir well. Chill overnight and serve cold. Enjoy!

Banana Bread

Banana Bread Recipe-from Carrie Malvig
Ingredients

* 3 or 4 ripe bananas, smashed
* 1/3 cup melted butter
* 1 cup sugar (can easily reduce to 3/4 cup) (i did do 3/4 cup :o)
* 1 egg, beaten
* 1 teaspoon vanilla
* 1 teaspoon baking soda
* Pinch of salt
* 1 1/2 cups of all-purpose flour

No need for a mixer for this recipe. Preheat the oven to 350°F (175°C). With a wooden spoon, mix butter into the mashed bananas in a large mixing bowl. Mix in the sugar, egg, and vanilla. Sprinkle the baking soda and salt over the mixture and mix in. Add the flour last, mix. Pour mixture into a buttered 4x8 inch loaf pan. Bake for 1 hour. Cool on a rack. Remove from pan and slice to serve.
