Fremont NE, has received a tree planting grant for residents living within the Fremont city limits. With this grant, the city is offering five species of trees to be planted in the program FREE OF CHARGE.

The tree choices are Black Oak, Shingle Oak, Sterling Silver Linden, Sienna Glen Maple and Emerald Sunshine Elm. All species are large shade trees. These trees will be approx. 6-10 feet tall when planted. Anyone interested in having a tree planted may stop by the parks & rec office at 925 N. Broad St or call 727-2810.

Nebraska Youth have an opportunity to participate in the Nebraska's Federal Junior Duck Stamp contest. Students compete in one of four age groups with prizes and ribbons going to the best in each group. The best art from each group becomes part of a traveling desplay with stops across NE. "Best of Show" is selected and goes on to the national contest held in Washington, D.C.

SUPER BOWL Glazed Chicken Wings

Bake: 40 minutes
Serves: 12

Ingredients:
12 chicken wings (about 2 pounds)
1 jar (16 ounces) Pace® Picante Sauce
1/3 cup orange marmalade
2 teaspoons Dijon-style mustard
1 tablespoon sesame seed, toasted

Directions:
Heat the oven to 425°F. Line a rimmed baking sheet with aluminum foil. Cut off the chicken wing tips and discard. Cut the chicken wings in half at the joint.

Heat 1 1/2 cups picante sauce, marmalade and mustard in a 2-quart saucepan over medium heat to a boil. Reduce the heat to medium-low. Cook for 40 minutes or until the mixture is reduced to 3/4 cup, stirring occasionally.

Place the chicken into a large bowl. Add the remaining picante sauce and toss to coat. Place the chicken onto the baking sheet.

Bake for 40 minutes or until the chicken is cooked through, turning the chicken over once halfway through the bake time. Baste the chicken with the picante-mustard mixture during the last 10 minutes of the bake time. Sprinkle with the sesame seed, if desired.

TIP Easy Substitution: You can substitute 24 chicken drumettes (about 2 pounds) for the 12 chicken wings in this recipe.

INDOOR winter Fun for Kids!

Salt Sculptures: Mix together 4 cups flour, 1-1/2 cups water and 1 cup salt. Sculpt the doughy mixture into shapes -animals, flowers, rockets or whatever your imagination inspires. Bake at 350 degrees for one hour. Cool and paint with acrylic paint, if desired.

Creative Hats: Decorate old baseball caps by gluing on beads, ribbons, sequins, feathers, fabric or anything else on hand. Have a contest for the prettiest or craziest cap creation.

Shiny Pennies: Kids love to make pennies look like new. Mix 4 tablespoons vinegar and 1 teaspoon salt in a small bowl. Drop pennies into the solution. If the pennies don't instantly become clean, stir them for a minute with a wooden spoon, then polish them with a soft cloth and a drop of vegetable oil to make them shine.

Magazine Scavenger Hunt: Grab a stack of old magazines. Make a list of 25 images to look for, such as a boy, girl, car or horse. Set a timer for 20 minutes and have children tear out the images. The one who finds the most items on the list in the allotted time wins. Recycle the magazines when finished.

Quick Pillowcase Costumes: Put old pillowcases to good use. Cut holes for the neck and arms. Use markers, paints and scrap fringe and lace to decorate the pillowcase. Ribbon or yarn can be used for a belt.

Refrigerator Magnets: Remove the metal lids from frozen juice cans. Cut a round piece of white paper to fit inside the rimmed edge of each lid. Have kids draw a design or self portrait on the paper and glue it to the lid. Glue a magnet to the back. Family members will have their own magnets to hold papers or pictures on the frig.

Candy Cane Kiss Cookies
Recipe by Our Best Bites
note: Crystal E. brought these delicious cookies to our 2010 MOPS Xmas Party!

1/2 c. butter-flavored shortening
1/2 c. real butter
1 c. brown sugar
1 c. white sugar
2 eggs
1 1/2 tsp. vanilla
optional: 1 1/2 tsp peppermint extract
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
2 1/2 c. flour, lightly spooned into measuring cups and leveled with a knife
1/4 c. + 2 Tbsp. unsweetened cocoa powder
1 1/2 c. dark chocolate chips
48 Hershey's Candy Cane Kisses, unwrapped

Preheat oven to 350.

Cream together softened butter, shortening, brown sugar, and white sugar for 1-2 minutes on medium-high speed or until light and fluffy. Add the eggs and vanilla. Meanwhile, combine the baking powder, baking soda, salt, flour, and cocoa powder. Add to the butter/sugar mixture and mix until combined. Mix in the chocolate chips.

Drop the dough by the tablespoonful onto an ungreased baking sheet. Bake for 8-10 minutes or until the centers are set but still soft. Remove from oven and allow to cool for 1-2 minutes. Top each cookie with an unwrapped Candy Cane Kiss. Allow to cool completely, long enough for the Kiss to harden. If necessary, after the cookies have cooled, they can be placed in the refrigerator or freezer to re-solidify the Kiss.

Bread pudding

2 cups half and half

1 15-ounce can pure pumpkin

1 cup (packed) plus 2 tablespoons dark brown sugar

2 large eggs

1 1/2 teaspoons pumpkin pie spice

1 1/2 teaspoons ground cinnamon

1 1/2 teaspoons vanilla extract

10 cups 1/2-inch cubes egg bread (about 10-ounces)

1/2 cup golden raisins

Caramel sauce

1 1/4 cups (packed) dark brown sugar

1/2 cup (1 stick) unsalted butter

1/2 cup whipping cream

Powdered sugar

preparation

For bread pudding:

Preheat oven to 350°F. Whisk half and half, pumpkin, dark brown sugar, eggs, pumpkin pie spice, cinnamon and vanilla extract in large bowl to blend. Fold in bread cubes. Stir in golden raisins. Transfer mixture to 11x7-inch glass baking dish. Let stand 15 minutes. Bake pumpkin bread pudding until tester inserted into center comes out clean, about 40 minutes.

Meanwhile, prepare caramel sauce:

Whisk brown sugar and butter in heavy medium saucepan over medium heat until butter melts. Whisk in cream and stir until sugar dissolves and sauce is smooth, about 3 minutes.

Sift powdered sugar over bread pudding. Serve warm with caramel sauce.

BUTTERFINGER "EYEBALLS" RECIPE

Create a memorable Halloween with this fun recipe for BUTTERFINGER® Eyeballs. With the delicious taste of creamy peanut butter dipped in melted, white morsels, as well as RAISINET® candy “pupils” and gooey red “bloodshot” markings, these tricky treats create an eye-popping experience for all to enjoy.

Ingredients:
• Wax paper
• 1 cup creamy peanut butter (not all-natural)
• 2 tablespoons butter or margarine, softened
• 2 cups powdered sugar
• 1 (2.1 oz.) NESTLÉ BUTTERFINGER Candy Bar, finely chopped
• 2 cups (12-oz. pkg.) NESTLÉ® TOLL HOUSE® Premier White Morsels
• 3 tablespoons vegetable shortening
• 1/4 cup NESTLÉ RAISINETS Milk Chocolate-Covered Raisins
• 1 small tube red decorator icing
• Wooden pick or skewer for dipping
Directions:
LINE 2 baking sheets with wax paper.

BEAT peanut butter and butter in large mixer bowl until creamy. Beat in powdered sugar until mixture holds together and is moistened. Stir in chopped Butterfinger. Shape into 1-inch "eyeballs." Place on prepared baking sheets. Freeze for 1 hour.

MELT morsels and shortening in large, uncovered, microwave-safe bowl on MEDIUM-HIGH (70%) power for 1 minute 30 seconds; STIR. Morsels may retain some of their original shape. If necessary, microwave at additional 10- to 15-second intervals, stirring just until melted. Remove one baking sheet of frozen "eyeballs" from freezer (keep other sheet in freezer until ready to use).

DIP one "eyeball" into melted morsel mixture using a wooden pick or skewer. Shake off excess and return to baking sheet. Gently press 1 Raisinet on top of "eyeball" to make a "pupil." Repeat procedure with remaining "eyeballs" on baking sheet. Refigerate until coating is set. Repeat with remaining sheet of "eyeballs" and coating. You may find it necessary to reheat morsel mixture before dipping second batch. Before serving, pipe decorator icing around eyeballs to create bloodshot markings. Store in covered container in refrigerator. Best served cold.
Remember to follow baking instructions before consuming.

Fremont High School is again offering a FREE preschool program for children age 3 1/2 to 5 years old. All participating children MUST be potty-trained. The preschool will be held for a five-week period.

Time choices are:

Sept 21st. through October 21st.

Jellin-Melon Snacks

1 cantaloupe, cut lengthwise in half
3/4 cup boiling water
1 pkg (3oz) Jell-o Cherry flavored gelatin
1/2 cup cold water

Remove seeds from melon halves, cut thin slice from bottom of each half. Scoop out melon flesh, leaving 1-inch thick shells. Place upside-down on paper towels to drain.

Add boiling water to gelatin, mix, stir 2min. until completely dissolved. Stir in cold water. Refrigerate 15 min or until slightly thickened. Pour into melon shells. Refrigerate 3 hours or until firm. Cut into wedges.

Variation: try using a honeydew melon and Lime jello or any combo you'd like.

1 container (1 pound) store-bought chocolate frosting
1 teaspoon vanilla extract
1/2 teaspoon instant coffee

Stir vanilla and coffee into frosting until smooth.

A delicious & easy Strawberry Recipe (pictured in the PC Trifle bowl available in April for only $29ea click HERE)

Strawberry Cream Trifle Recipe

1/2 cup sliced almonds, toasted
1 pkg (10.75 oz) frozen pound cake, thawed
1 qt. fresh strawberries
1 container (16 oz) frozen sliced strawberries in syrup, thawed
1 lemon
3 containers (8 oz each) blended strawberry yogurt
1 pkg (3.4 oz) cheesecake instant pudding and pie filling
1 container (8 oz) frozen whipped topping, thawed, divided
Powdered sugar

Coarsely chop almonds using Food Chopper. Cut pound cake into 1-in. cubes using Color Coated Bread Knife; set aside. Set aside one strawberry for garnish. Hull remaining strawberries and cut into quarters. In Classic Batter Bowl, combine fresh and frozen strawberries; mix well.

Juice lemon using Juicer to measure 2 tbsp juice. In Mixing Bowl, whisk lemon juice, yogurt and pudding mix until smooth using Whisk; immediately fold in 1 cup of the whipped topping.

To assemble trifle, place one-third of the pound cake cubes into bottom of Trifle Bowl. Top pound cake with one-third of the strawberry mixture. Top with half of the yogurt mixture, spreading evenly. Sprinkle with one-third of the almonds. Repeat layers one time. Top with remaining pound cake cubes and remaining strawberry mixture.

To garnish, spread remaining whipped topping over top of trifle, forming a flat surface using Small Spreader. Sprinkle remaining almonds over whipped topping. Sprinkle with powdered sugar using Flour/Sugar Shaker. Create strawberry fan with reserved strawberry; place into center of trifle.

Cook's Tip: To toast almonds, place almonds into Small Micro-Cooker®; microwave on HIGH 1-2 minutes or until golden brown, stirring after each 30-second interval. Cool completely.

To make a strawberry fan, open the Egg Slicer Plus® and place the strawberry stem end down; slice most of the way through it with wires. Remove the strawberry from the wires and gently fan out the slices.

Nebraska Students Art Contest

Nebraska students in kindergarten through fifth grade are encouraged to show their creativity by entering the 2010 Nebraska Spirit Art Contest. The contest, which is designed to promote Nebraska, is sponsored by Secretary of State John Gale and Nebraska's government.

Entries will be accepted starting March 1st and must be postmarked by April 26, 2010. Contest details are available HERE.

The winners from each grade will have their work featured on a computer screen saver. On June 4th, a day of activities will be held in Lincoln, NE for the winners and their families and teachers.

You will be able to take home as many "new to you" clothing or toys as you bring to recycle.

All extra items will be donated to the Open Door Mission's Lydia House. You can also make a monetary donation in any amount for the Whole Planet Foundation, which provides microcredit loans to women in developing countries to help lift themselves out of poverty.

...Scott Butler learned a lesson one day - that his role as a parent was to shut up and get out of the way and help his son when he needed help. Scott, an expert on the 40 Developmental Assets and an assistant principal at Beadle Middle School in Millard will speak at this conference along with his son Danny, age 16, about that lesson and other lessons they've learned together. Specifically, they'll look at the role parents play in developing some of their kids' key personal and social traits, known as the 40 Developmental Assets. Research indicates the traits help them thrive and avoid risky behaviors. They will focus on the "I cans" of parenting:

* Involvement
* Consistency
* Awareness
* Nurturing
* and Spirituality

They plan to have a little fun with the topics, using video clips from popular movies to show when parents have handled a situation well or badly. This morning long conference will offer up experts in a wide range of topics, such as bullying, cybersafety and reading strategies. Multiple sessions are scheduled to allow attendees to attend the mini sessions that interest them the most.

"Save-A-Life Saturday" at Midland Event center on the Midland College Campus in Fremont, NE. Six sessions to choose from: 8am, 9:15am, 10:30am, 12:15pm, 1:30pm or a Spanish session at 3pm. This is a FREE event. This community-wide educational opportunity to learn the life-saving skills of adult CPR. The program is taught by certified instructors. CPR, or cardiopulmonary resuscitation, is a simple emergency procedure used when someone's breathing and heartbeat stop suddenly. This is called sudden cardiac arrest. Many things can bring on cardiac arrest, such as heart attack, respiratory arrest, electrocution, drowning, choking, and trauma. Statistics show that the earlier CPR is initiated, the greater the chances of survival. There's no cost, no formal classroom setting, no reason for you not to learn how to save a life. Sessions last approximately 1 hour (see times listed above). Volunteer instructors will teach individuals how to recognize and properly care for life-threatening respiratory and cardiac emergencies for adults. Children who will be 5 years, on or before Oct 15th, 2010 are eligible to enroll and attend kindergarten in the district. Parents or guardians along with the child should plan to spend approximately an hour and fifteen minutes at school for the registration session. Creighton University School of Dentistry to offer care for kids on Feb 6th through the "Give Kids a Smile" program. From 8am-noon in the Boyne Building at 2802 Webster Street on their Omaha campus, dental exams, x-rays, cleaning, fluoride treatment and dental sealants will be provided for children ages 3 to 14. This program is designed to provide dental education and preventive dental care for uninsured children. To make an appointment, call 280-2863.

Apple Crisp with a Twist!

This classic crisp has a twist: maple syrup & cranberries -Enjoy!

Ingredients:
3/4 cup plus 1/2 Tablespoon all purpose flour
1/2 cup brown sugar
1/2 cup old-fashioned oats
1 Teaspoon cinnamon
1 stick cold butter, in chunks
1/2 cup pecans, chopped
2 1/2 lbs. apples, peeled
1/2 cup dried cranberries
1/4 cup maple syrup

Directions:
Step 1: for the topping, put 3/4 cup flour, sugar, oats, cinnamon, and butter in a food processor and pulse to form moist clusters. Mix in pecans.

Step 2: Cut the apples into 1/2 inch chunks and put them in a buttered 9 1/2-inch, 2 quart pie pan. Add cranberries, maple syrup, and 1/2 Tablespoon flour; mix. Scatter on topping. Place pan on a parchment lined baking sheet.

Step 3: Bake at 375 degrees for 40-50 minutes. Serve warm, at room temp or chilled.

Walk Through Bethlehem

Walk Through Bethlehem' provides a rare and unique opportunity for people to step back in time and experience the city of Jesus’ birth. Bethlehem will be bustling with hands-on activities, citizens to mingle with and animals to pet. Guests will be invited to sample stew and bread, try their hand at weaving, create their own coin and view the manger scene complete with Mary and Joseph and baby Jesus. The sights and sounds and even smells of this event are certain to delight visitors of all ages. Brookside has opened its door to the community for over ten years for ‘Walk Through Bethlehem’. Turkey Leftovers? Try this!

I love Thanksgiving turkey, but I gotta be honest- by the time I have turkey dinner, turkey sandwiches, turkey & stuffing casserole, and turkey noodle soup, I am a bit turkey'd out.

Remake your leftovers with this yummy and healthy soup. (I heard it has a pretty low point value if you are doing Weight Watchers. Can anyone verify this for me?)

Mexican Chicken Chili
Makes 6, 1 cup servings

1 zucchini, coarsely chopped or shredded
1 can black beans
1 can pinto beans (you can substitute chili beans)
1 can kernel corn (frozen corn works too)
2 cans chicken broth
1 jar of Pace Picante Salsa, mild
1 can (small) tomato sauce
2 large cans of white chicken (or 2-4 cups leftover turkey)
1 clove of garlic
1 ½ tbls chili powder
1 tsp cumin

Bring to boil, reduce heat, simmer 30 minutes.
Suggested toppings: cheese, sour cream, green onion, tortilla chips, or cilantro.

This recipe is extremely forgiving, so feel free to play around with it and make it your own. Enjoy!

2 cups pineapple juice
1/4 cup maraschino cherry syrup
8 maraschino cherries
1 (750-milliliter) bottle Prosecco

In a medium bowl, combine pineapple juice and cherry syrup. Place 1 cherry in the bottom of each champagne flute. Pour 1/4 cup pineapple mixture into bottom of each flute. Top with Prosecco. Makes about 8 drinks. Cheers!

Pumpkin Streusel Cheesecake Bars
Cookie Base
1 pouch (1 lb 1.5 oz) Betty Crocker® oatmeal cookie mix
½ cup crushed gingersnap cookies
½ cup finely chopped pecans
½ cup cold butter or margarine
Filling
2 packages (8 oz each) cream cheese, softened
1 cup sugar1cup canned pumpkin (not pumpkin pie mix)
2 tablespoons Gold Medal® all-purpose flour
1 tablespoon pumpkin pie spice
2 tablespoons whipping cream
2 eggs
Toppings
1/3 cup chocolate topping
1/3 cup caramel topping
Directions
1. Heat oven to 350°F. In large bowl, stir together cookie mix, crushed cookies and pecans. Cut in butter, using pastry blender or fork, until mixture is crumbly. Reserve 1 cup mixture for topping. Press remaining mixture in bottom of ungreased 13x9-inch pan. Bake 10 minutes. Cool 10 minutes.

2. Meanwhile, in large bowl, beat cream cheese and sugar with electric mixer on medium speed until smooth. Add remaining filling ingredients; beat until well blended. Pour over warm cookie base. Sprinkle with reserved topping.

3.Bake 35 to 40 minutes or until center is set. Cool 30 minutes. Refrigerate about 2 hours or until chilled.

4. Before serving, drizzle with chocolate and caramel toppings. For bars, cut into 6 rows by 4 rows. Store covered in refrigerator

Mouthwatering Monday...Caramel Apple Bars!

Ingredients:

1 cup Brown Sugar, packed
1/2 cup Butter or Margarine, softened
1/4 cup Shortening
1+3/4 cups all purpose flour
1+1/2 cups quick cooking oats
1 teaspoon salt
1/2 teaspoon baking soda
4+1/2 cups tart apples, coarsely chopped & peeled(about 3 apples)
3 tablespoons all purpose flour
1 bag 14oz. caramels

Directions:
1. Heat oven to 400 degrees. Mix brown sugar, butter, and shortening in a large bowl. Stir in 1+3/4 cups flour, the oats, salt and baking soda. Reserve 2 cups oat mixture; then press remaining oat mixture in ungreased 13x9 pan.

2. Toss apples with 3 tablespoons flour; spread over mixture in pan. Heat caramels over low heat, stirring occasionally until melted; pour evenly over apples. Sprinkle with reserved oat mixture; press lightly.

3. Bake 25-30 minutes or until topping is golden brown and apples are tender. For 36 bars, cut 6 rows by 6 rows while warm. Store covered in refrigerator.

Mouthwatering Monday...Breakfast Casserole!

INGREDIENTS
* 1 pound sage flavored breakfast sausage
* 3 cups shredded potatoes, drained and pressed
* 1/4 cup butter, melted
* 12 ounces mild Cheddar cheese, shredded
* 1/2 cup onion, shredded
* 1 (16 ounce) container small curd cottage cheese
* 6 jumbo eggs

DIRECTIONS
1. Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 9x13 inch square baking dish.
2. Place sausage in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, crumble, and set aside.
3. In the prepared baking dish, stir together the shredded potatoes and butter. Line the bottom and sides of the baking dish with the mixture. In a bowl, mix the sausage, Cheddar cheese, onion, cottage cheese, and eggs. Pour over the potato mixture.
4. Bake 1 hour in the preheated oven, or until a toothpick inserted into center of the casserole comes out clean. Let cool for 5 minutes before serving.

Free Books Every Month for your child!

It sounds almost too simple to be true, but by reading regularly with your children during their preschool years, you are giving them the biggest boost toward a successful education they will ever get. Dolly Parton's Imagination Library will help you read with your child. There are many reasons parents do not read to their child, but we can eliminate one of them.

Every child will have books of their very own, at no cost to you, thanks to Fremont Area United Way & Dolly Parton... Each month a new carefully selected book will be mailed in your child's name directly to your home. He/she can look forward to new and exciting reading adventures until he/she turns five years old as long as you remain a resident of Dodge County. Should the child move outside Dodge County, he/she automatically exits the program.

Who is eligible? Children aged birth to their fifth birthday who reside in Dodge County.

What are your responsibilities? Be a resident of Dodge County, submit a completed registration form or use online registration , Notify the Fremont Area United Way any time your address changes, and READ TO YOUR CHILD.

When will my child start receiving books? Eight to ten weeks after your registration form or online submission has been received, books will begin arriving at your home and will continue until your child turns five or you move out of Dodge County.
NOTE: The on-line website is a little confusing...just ignore any of the "Login/Password" boxes.

How can you help? Do you know a young child in Dodge County who is not receiving Dolly Parton's Imagination Library? Give their parents a brochure (available at MOPS meetings) and encourage them to fill it out and mail it. Telling them about this FREE program can make a huge difference in their future and the future of our community. Thanks to Crystal M. for alerting MOPS about this great program!
